for May 5th a.k.a Cinco De Mayo!!
I’m going to keep this short and sweet. I basically want to make sure you have the links to all my favorite Mexican-ish (more like Americanized Mexican) recipes in one spot. Because Cinco de Mayo is right around the corner and I think more than ever we need to celebrate Mexican culture and heritage. Were I live we have some exceptional Mexican restaurants and honestly it is always my first choice when going out to eat, but a girl can’t eat out everyday so I need to have some Mexican recipes for home. These dishes are tried and true. Nothing new here. I have been eating some of these recipes since I was a kid. They have been passed down from my mom or my grandma and now I’m sharing them with you! Insert Latin lady dancing emoji.

Grandma Beattys Wet Burrito Recipe
This Easy Dorito Taco Salad is everything! When I think of this recipe, it brings back memories of family picnics, church potlucks, days at the beach, easy weeknight dinners in the heat of the summer. (I grew up without air conditioning, life was rough. LOL) This is still one of my favorite salads. I mean, Doritos, come awwwwwn people, what’s not to like?
Easy Mexican Street Corn Casserole is always on the table for every party, or large gathering. This recipe freezes well, so it can be made in advance, making summer entertaining easier. I developed this recipe because all my kids had braces and they love Mexican Elote Corn, but with braces corn on the cob is not easy to eat, so I cut the corn off the cob mixed it with all the elote corn toppings and baked it. Voila! A star was born.

One of the easiest things you could ever make and the most impressive to your guests is homemade tortilla chips. You will wonder why you haven’t been baking them at home all along. I admit, I still buy bags of chips, but if I’m having a party I’m making chips because they are the cats meow! And people think I’m the cats meow when I make them.
I will literally never forget the first time I ate this amazing dip/ condiment. I had just started dating Ken, we were at his friends house, and Scott was chopping up tomatoes from his garden, and onions, with jalapeño, cilantro and he added lots of lime juice with a heavy sprinkle of Mortons Natures Seasoning Salt. Then he opened a bag of tortilla chips and handed me a Corona and I looked at Ken and said will you marry me? Sorry to say, Ken does not have the skills in the kitchen that his friend does, but I married him anyway. Ken not his friend, just so there’s no confusion. No summer day is complete without Pico de Gallo and tortilla chips. It’s the best when the tomatoes are in season and warm from the vine. Heaven.
I don’t know about you but guacamole is fairly new to me. By new I mean I don’t think I ever had eaten an avocado until my twenties, and for sure did not make guacamole at home until my late twenties, maybe thirties. Please don’t judge me. Honestly, avocados are quite a recent development in the food scene in comparison to say ketchup. Now my kids on the other hand grew up eating “Avo Toast”. I know I haven’t done them any favors they have no idea what hardship is. Anyhoo, this is my very limey, full of flavor guacamole recipe. It’s so incredibly easy, life has not been fully lived until you’ve eaten it! Go forth and make guacamole my friend!
